Cucumber, cheese and pine nuts recipe: the perfect appetizer!

It is still raining and we have spent three days of the long weekend almost all the time at home, except yesterday, when it was cloudy but it didn't rain and we were able to work in the vegetable garden. Like other times when we spend time indoors, we have tried new recipes and, among others, we have loved this appetizer which is more suited to the warmer months but is so, so tasty, that we think we will prepare it in the same way in winter.

We were inspired by a recipe that Chloé Sucrée shared a few days ago on her Instagram and we have adapted it with the ingredients we had at home. It turned out so well that we're sharing it with you in case you'd like to try it too.

CUCUMBER, CHEESE AND PINE NUT APPETIZER

INGREDIENTS

  • 1 cucumber

  • Cheese spread

  • Zest of 1 lemon

  • Approximately 3 pine nuts per cucumber slice

  • Pinch of coarse salt

  • Pinch of chives

INSTRUCTIONS

  1. Peel the cucumber, wash it. Cut into thick slices and place in a flat bowl.

  2. Spread the cheese on each cucumber slice.

  3. Add a pinch of coarse salt to each slice.

  4. Grate the lemon, reserving the zest.

  5. Add a little lemon zest to each slice.

  6. Toast the pine nuts in a frying pan with a pinch of olive oil. When golden brown, set aside.

  7. Add three pine nuts to each cucumber slice on top of the above ingredients.

  8. Chop some chives (or other fresh herb of choice) and add to each slice.

  9. Your appetizer is ready! Bon appétit !
