Fennel soup recipe
Good morning.
Several of you have asked for it and here is the recipe for the fennel soup that we told you about a few days ago on Instagram.
It is very simple, easy and economical. The initial recipe was shared with us a few years ago by our friends Alberto and Mati, two adopted Galicians and Parisians whom we have missed a lot since we left the Bastille district. Alberto is one of the best cooks we know. He creates real delicacies with the ingredients he finds, and we have cooked this fennel soup or broth very often at home since we tried it at one of those dinners we used to share together.

FENNEL SOUP OR FENNEL BROTH RECIPE

INGREDIENTS:
2 fennel bulbs
1 onion
1 clove of garlic
A good splash of olive oil
1.5 l chicken stock
A pinch of salt
INSTRUCtions:
Dice the onion, fennel and garlic clove.
Add a pinch of salt.
When everything is soft, add the chicken stock. For a vegetarian version, you can leave out the chicken stock and replace it with a litre and a half of water - the soup will be delicious too! For the original option with chicken stock, you can make the 1.5 litre of stock with cooked carcasses or a chicken stock cube.
Bring to the boil and when the stock comes to the boil, simmer for half an hour.
Whisk well.
After whisking the stock, strain it through a mesh strainer or a chinois. This step is important so that there are no lumps from the fennel.
And that's it, serve hot as a starter or first course.
